Crispy Chilli Welsh Beef

INGREDIENTS

PGI Welsh Beef rump steak, cut into fairly thick strips (1898 Celtic Pride 227g, 1991 Celtic Pride 284g, 2161 Celtic Pride 340g)
3 tbsp oil
4 tbsp cornflour
1 tsp Chinese five-spice
¼ tsp chilli powder
½ tsp black pepper
75g mange-tout or sugar snap peas, sliced
1 carrot, cut into matchsticks
Root ginger (2cm piece), cut into matchsticks
½ tbsp sesame oil

FOR THE SAUCE

1 small orange, rind and juice
2 tbsp sweet chilli sauce
1 tbsp reduced salt soy sauce
1 tbsp ketchup
½ tsp chilli flakes or ½ red chilli, finely chopped

TO SERVE

Sesame seeds
Boiled rice
