WK. 2: DARE TO TRY OUR SCARY SWEETCORN FRITTERS?
An unbelievably quick and easy recipe that can be made at home or even be showcased on a menu!
Ingredients for the fritters:
Tilda Firecracker Rice – 1 pack
Frozen or Tinned Sweetcorn – 8oz
1 Whole Egg + 3 Egg Yolks
Self Raising Flour – 1tbsp
Ingredients for the dip:
Fresh Lime (zested and juiced)
– Quite simply mix all the ingredients in a bowl. If the mix is too wet, add more flour to bind.
– Shape into patties or balls and fry in oil and butter until crispy.
– For the dip, mix the mayo with the juice and zest of the lime and serve on the side.
