Eat Them To Defeat Them: Creepy Carrot and Coconut Rice Pudding with Mango Jam

WK. 4: DARE TO TRY OUR CREEPY CARROT & COCONUT RICE PUDDING WITH MANGO JAM?
An unbelievably quick and easy recipe that can be made at home or even be showcased on a menu!
INGREDIENTS:
Tilda Coconut Rice x 2
Crème Fraiche or Double Cream 100ml
Grated Carrot (grate 3 medium sized carrots)
Fresh Mango x2 or Diced Frozen 8oz
Marmalade 1 tbsp
Honey 1tbsp
METHOD:
Simmer the carrot with the marmalade, honey and mango for 3 – 4mins until sticky.
In another pan warm the rice up, add the cream and add a pinch of nutmeg,
Serve in glass dish or bowl
