Feather Steak with Chimichurri Sauce

  1. First of all start the chimichurri sauce: begin with chopping all the herbs nice and fine, then finely dice the shallot, and bash the garlic cloves to produce a paste. Slice the chillies nice and fine. Combine all together and sprinkle a pinch of salt. Squeeze the lemon then add the olive oil, just enough to make a wet looking pesto. Check for seasoning
  2. Heat up a pan and add the cooking oil, heat enough to sear. Add the steak to the pan and cook the steak about 3-4 minutes on each side.
  3. Once the steak is cooked remove from the pan and let the steak rest for about 5 minutes.
  4. Slice the steak against the grain and spoon over the chimichurri sauce and serve immediately.
